Off the Wagon
September 5th, 2006So I keep falling off the wagon. I can’t seem to stay on any diet for long. I think it is stress. I have high bills and depression to go along with it. See I use to work in the tech field and can’t seem to find employment there, so I work in jobs paying half that much. Such is life. I made the mistake of taking on too much debt. Folks, even with six months of savings, money does run out when your bills are about equal to your pay.
No wonder I can not focus. The more stressed out I get, the more I eat and the less I exercise. As a matter of fact, stress seems to make me more hungry. I am not blaming anyone else but myself. I think I have been ignoring this problem for some time now. It is time for me to learn how to manage stress besides eating, no matter what the problem is. At times, I think the stress has gone away, then it comes back again. I have got to manage this or my weight is going to continue to rise and I will never defeat PCOS. I know there is no cure for PCOS, but there is a way to control it….Through eating right, supplements, excercise and support.
I have gained 15 pounds in two months due to stress and overeating. I can’t even face my family now, for I am afraid they will look down on me. I know they say cortisol increases with stress so that doesn’t help anything. Cortisol they say, aggravates insulin resistance. I guess I have no choice other than to treat my body right no matter how depressed I feel. This is the most difficult thing for me to do now. I hate to admit defeat, but I must be real. It is hard to exercise and eat right when I am depressed. THe ironic thing is that one way to help manage depression is to get of my a$$ and go to the darn gym.
Now that I have admitted I have a problem, the next step is to find a support group.

August 30th, 2006It is darn near impossible to overcome carb addiction when you are addicted to Publix cakes! It is even worse when you are insulin resistant or have PCOS, because your body doesn’t know how to efficiently stabilize the sugar that it already has . I was walking through Publix of all places and was so overcome with carb cravings that I baked cupcakes in the middle of the night! I didn’t want to eat all the refined carbs, so I came up with a compromise:)…
Low Carb Cupcakes with Lemon Cream Cheese Icing Recipe
Ingredients for the cupakes:
3/4 cup almond flour (can buy from health food store or online)
3/4 cup white flour (the bad stuff)
1 cup Splenda
1/4 cup refined white sugar (more bad stuff)
1/4 cup butter
1/4 cup oil (for moistness)
2 heaping teaspoons baking powder
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
3 eggs
cupcake cups (liners)
Ingredients for lemon cream cheese icing:
8 oz cream cheese (1 bar of cream cheese)
1 tablespoon heavy whipping cream
2 and 1/4 cups Splenda
Cupcakes Preparation
Note: Take out cream cheese now, so that it can soften
1. Preheat oven to 350. Mix together butter, Splenda, oil and sugar
2. While using with a mixer, add in each egg, one at a time
3. Add in lemon and vanilla
4. Add in dry ingredients - baking powder, almond flour and white flour
5. Put cupcake cups into cupcake pan
6. Pour batter into cupcake cups leaving a little room at top
7. Bake in oven about 10 to 15 minutes. Watch closely!
While that is baking, prepare creamcheese icing
1. Mix cream cheese, Splenda and lemon extract
2. Add in heavy cream according to how smooth you want it. Recommend adding 1/2 teaspoon at a time. Every little bit makes a difference.:)
Spread on cupcakes after they are cooled Enjoy!

August 16th, 2006I felt that the only way to wean myself off of the “bad carbs” was to use substitutes. I love creamcheese icing on cake. So I made an almond flour pound cake with cream cheese icing. It was decent enough to satisfy my sweet tooth. It had a lot of fat, but it was good fat. I used splenda to replace the sugar, but added a bit of real sugar and added a bit of white flour so it would rise a bit. It seemed to work. It tasted a bit grainy. I guess that is what happens when you use almond instead of white flour for more than 90% of the the flour! No, I am not giving out the recipe yet, for I think it could be better.
I also started taking more chromium 400mcg from 230 mcg. I know it is drastic, but it seems to work.
Working our also gives me positive results when trying to kick the carb addiction. For some reason exercise makes me feel less hungry for the rest of the day. I can never convince myself of this before I go work out though. Go figure!

August 12th, 2006The petition talks about how PCOS is not given enough attention and how many women and girls have been misdiagnosed. They claim it is estimated that less than half of women with this condition know that they have it.
If this is true it is unacceptable in my opinion. I believe it to be true, because half of the doctors I went to had not a clue. Remember it is estimated that 10% of women have this problem.
